Foodie and owner of The elbowroom escape, Lisa Wilkinson, and head chef Caitríona Nic Philibín have launched a sustainable, seasonal gourmet cooking school. Following their successful running of a vegetarian and vegan café in Dublin, this new venture uses only local, seasonal produce, much of which is grown in their kitchen gardens.
This cooking school is set to open on Sunday the 10th of March. The elbowroom escape will host a series of cooking classes for those wishing to explore vegetarian and vegan cuisine, while improving their knowledge of plant-based cooking, in a beautiful setting.
The cooking school will teach guests how to prepare healthy and delicious meals, with the use of their woodfired pizza oven, professional galley kitchen and outdoor grill. The elbowroom escape team has had continued success catering for an array of guests between private weddings, corporate events and themed group dining experiences.
“Vegetarian cooking has become an increasingly exciting and innovative way to dine. We were determined to use only seasonal Irish produce and keeping a truly sustainable ethos” says Lisa Wilkinson. “I was tired of seeing avocados, quinoa and a plethora of other ingredients shipped from across the planet in every vegetarian cookbook, so instead we teach how to make Irish produce like swedes and sprouts sexy”.
These cooking lessons are open to all levels from ages 15 up. The elbowroom escape team will provide all the skills needed to help improve families’ health through diet, incorporate more flavour into whole-food dishes and offer tools to entertain dinner guests in style, leaving participants with invaluable skills.
